You'll go bananas for these Banana Peanut Butter Parfaits.
1/4 cup natural peanut butter
1/4 cup pitted medjool dates (about 6 dates)
1/4 cup + 2 tbsp unsweetened almond milk
1 tbsp maple syrup
1/2 tsp vanilla extract
Pinch of salt
1 box Simple Mills Soft Baked Snickerdoodle Cookies
1 cup unsweetened coconut yogurt
2 bananas, sliced
PREPARE 4 serving glasses or small mason jars.
ADD peanut butter, dates, almond milk, maple syrup, vanilla extract and salt to a blender and blend until smooth, adding more almond milk if necessary to blend more smoothly. Set aside.
CRUMBLE 4 Simple Mills cookies and divide half of the pieces among your jars. Pour 1 tablespoon of the peanut butter caramel in each jar. Top with 3 tablespoons of coconut yogurt.
DIVIDE the banana slices among the 4 jars. Top with the rest of your crumbled cookies, peanut butter caramel and coconut yogurt.
GARNISH with coconut flakes and more crumbled cookies.
