Banana Peanut Butter Parfaits made with SoftBaked Almond Flour Cookies Snickerdoodle Recipe

Ingredients:

Caramel:

1/4 cup natural peanut butter
1/4 cup pitted medjool dates (about 6 dates)
1/4 cup + 2 tbsp unsweetened almond milk
1 tbsp maple syrup
1/2 tsp vanilla extract
Pinch of salt
 

Filling:

1 box Simple Mills Soft Baked Snickerdoodle Cookies
1 cup unsweetened coconut yogurt
2 bananas, sliced
Coconut flakes

Instructions:

PREPARE 4 serving glasses or small mason jars.

ADD peanut butter, dates, almond milk, maple syrup, vanilla extract and salt to a blender and blend until smooth, adding more almond milk if necessary to blend more smoothly. Set aside.

CRUMBLE Simple Mills cookies and divide half of the pieces among your jars. Pour 1 tablespoon of the peanut butter caramel in each jar. Top with 3 tablespoons of coconut yogurt.

DIVIDE the banana slices among the 4 jars. Top with the rest of your crumbled cookies, peanut butter caramel and coconut yogurt.

GARNISH with coconut flakes and more crumbled cookies.
