We're hopping on the 'Chaffle' trend with this easy, savory version using our Organic No Added Sugar Pancake & Waffle Mix.
Ingredients:
1 egg
¼ cup Simple Mills No Added Sugar Chestnut Flour Pancake and Waffle Mix
1/4 tsp baking soda
1/4 tsp onion powder (optional)
1 cup mozzarella cheese (dairy-free cheese works, too!)
1 fried egg
¼ avocado, sliced for topping
Salt and pepper
Instructions:
WHISK egg, waffle mix, baking soda, and onion powder in a large bowl.
FOLD the cheese into the batter.
HEAT a waffle iron according to the model directions, greasing with a bit of butter or oil.
SCOOP batter into the waffle maker, spread evenly to cover the iron, and cook according to the model directions, until golden brown.
GARNISH chaffle with egg, avocado, salt, and pepper.
REPEAT as desired for additional waffles.
