Ingredients:
1/2 cup Simple Mills Protein Pancake Mix
1/2 cup chickpea flour
1.5 cups (12oz) warm water
2 T olive oil
1/2 tsp salt
A few grinds of black pepper
8” crepe pan
Olive oil cooking spray
Instructions:
COMBINE dry ingredients in a bowl using a whisk. Add olive oil and warm water and whisk until smooth.
HEAT an 8-inch crepe pan over medium-high heat. Once it’s hot, spray it liberally with cooking oil spray (you can brush with oil but the spray is helpful) and return to heat while you get your batter.
FILL a 2-oz ladle with batter and pour into pan in an even stream with one hand while your other hand swirls the pan to get the batter evenly spread to the edges.
It should bubble and look lacy. If you aren’t getting the lacy look, your pan/ oil probably isn’t hot enough.
COOK until edges are crispy, and the dosa is fully set.
USE a small offset spatula, or a flexible metal spatula, and run it under the edge of the dosa to make sure there isn’t any sticking. Give it a shake and flip it over. Let cook another 2 minutes. Transfer to a wire rack to cool.
REPEAT with remaining batter.
