Matcha Pancakes

Ingredients:
For the Pancakes
1 ½ cup Simple Mills Pancake & Waffle Mix
1 tbsp matcha powder
2 tsp honey
2 tbsp coconut oil, melted and cooled
2 eggs
4 tbsp water
Coconut oil to grease pan
Optional Toppings
Greek Yogurt (sub. Coconut yogurt if desired)
Blackberries
Chopped pecans
Honey
Instructions:
MIX the Simple Mills Pancake & Waffle Mix with the matcha powder, honey, melted coconut oil, eggs, and water.
HEAT a skillet on the stove over medium heat with a little coconut oil.
SPOON about 3 tablespoons of the batter into the skillet.
FLIP the pancake over after 1 – 2 minutes and let it cook on the other side for another minute before transferring it to a plate.
REPEAT the above steps until there is no batter left.
TOP the pancakes with greek yogurt, blackberries, chopped pecans, and honey if desired.
