Chocolate cupcakes topped with rich and creamy chocolate frosting make a decadent dessert that embody the midnight hour. However, these Midnight Cupcakes can be enjoyed any time of day or night!
Midnight Cupcakes made with Almond Flour Baking Mix Chocolate Muffin & Cake Recipe


3 eggs
1/2 cup cold brew coffee
1/3 cup coconut oil, melted and cooled
1 tbsp vanilla extract
1 box Simple Mills Chocolate Muffin & Cake Mix
1 tub Simple Mills Chocolate Frosting
Golden sprinkles (optional)


PREHEAT oven to 350ºF. Line cupcake pan with cupcake liners.
MIX eggs, coffee, coconut oil and vanilla extract in a large bowl. Slowly mix in baking mix.
SPOON batter into prepared muffin cups, filling each 2/3 full.
BAKE for 15-20 minutes or until a toothpick comes out clean. Let cool completely before frosting. 
ALLOW frosting to come to room temperature. Microwave for a few seconds and stir for extra spread-ability. Mix frosting until smooth and spreadable. 
TRANSFER to a piping bag or Ziploc bag.
PIPE chocolate frosting using a Ziploc bag with a corner cut off.
TOP with golden sprinkles.
