Mini Pancake Bites made with Almond Flour Pancake and Waffle Mix Recipe

Ingredients:

1 1/2 cup Simple Mills Pancake & Waffle Mix
2 eggs*
3 tbsp unsweetened vanilla-flavored plant based milk (like cashew, almond or oat)
2 tbsp avocado oil, plus more for greasing
 
Topping options:
Chopped strawberries
Raspberries
Halved blackberries
Blueberries
Chocolate chunks
 

Instructions:

PREHEAT oven to 350ºF and grease mini cupcake pan(s) with avocado oil.
ADD Simple Mills Pancake & Waffle Mix into a bowl along with eggs, milk and oil. Whisk until smooth.
DIVIDE the batter between the mini cupcake cups, filling them about 3/4 full. This should give you between 18 and 20 mini muffins.
TOP with toppings of choice like berries or chocolate chunks, slightly pressing them into the batter.
BAKE for 12-15 minutes or until golden on top and they feel dry.
REMOVE from oven and let cool for 15 minutes.
REMOVE from pan and enjoy.
 
 

Tips:

** To make vegan, substitute 2 eggs with 2 flax eggs (2 tbsp ground flax + 6 tbsp water).
