These Lemon Pistachio Cupcakes are the perfect combination of sweet and salty!
Instructions:COMBINE eggs, oil, water and vanilla in a mixing bowl.
ADD in Vanilla Cake Mix and zest of 1 lemon.
LINE a muffin pan with cupcake liners and pour batter into liners, filling them 3/4 full.
PREHEAT oven to 350ºF and pop the muffins in and bake for 15-20 minutes.
ADD cream cheese and Simple Mills Vanilla Frosting to a large bowl and beat using an electric mixer until fluffy.
TRANSFER frosting into a Ziploc bag and cut the corner to make your own piping bag. Pipe each cupcake.
TOP with chopped pistachios
