These Lemon Pistachio Cupcakes are the perfect combination of sweet and salty! 
Lemon Pistachio Cupcakes made with Vanilla Cupcake & Cake Mix Recipe

Ingredients:

1 box Simple Mills Vanilla Cake Mix
3 eggs
1/3 cup coconut oil
1/3 cup of water
1 tsp vanilla extract
Zest of 1 lemon
1 container of dairy-free cream cheese
1/4 cup Simple Mills Vanilla Frosting, at room temperature
1/4 cup shelled and chopped pistachios

Instructions:

COMBINE eggs, oil, water and vanilla in a mixing bowl.
ADD in Vanilla Cake Mix and zest of 1 lemon.
LINE a muffin pan with cupcake liners and pour batter into liners, filling them 3/4 full.
PREHEAT oven to 350ºF and pop the muffins in and bake for 15-20 minutes.
COOL completely.
ADD cream cheese and Simple Mills Vanilla Frosting to a large bowl and beat using an electric mixer until fluffy.
TRANSFER frosting into a Ziploc bag and cut the corner to make your own piping bag. Pipe each cupcake.
TOP with chopped pistachios
