Pizza Muffins made with Almond Flour Artisan Bread Mix Recipe


1 box Simple Mills Artisan Bread Mix
1 egg
4 tbsp water
2 tbsp olive oil
2 tbsp apple cider vinegar
12 tbsp organic pizza sauce
24 slices of vegan pepperoni
12 tbsp shredded cheese (dairy free, if desired)
Fresh parsley or basil, for garnish


PREHEAT oven to 350ºF and grease generously a muffin pan with olive oil.
ADD egg, water, olive oil and apple cider vinegar into a bowl. Mix to combine. Add in the Simple Mills Artisan Bread Mix and mix to combine.
SCOOP out 2 tablespoons of the dough mixture and place into a muffin cup. Using your fingers, create a little cup. Repeat for the rest of the mixture, creating a total of 12 cups.
SPOON 1 tablespoon of pizza sauce into each cup. Top with 2 slices of pepperoni and 1 tablespoon of shredded cheese.
BAKE for 20-25 minutes or until the cups are starting to brown.
LET COOL slightly and garnish with fresh parsley or basil. Enjoy immediately.
