Meet the ultimate Fall treat: Frosted Pumpkin Bars. This version of the Fall classic is dairy free, full of nutrient-dense ingredients, and sure to be a crowd-pleaser.
⅓ cup coconut oil, melted
½ cup water
2 tsp. vanilla extract
For the Frosting
¾ cups dairy free cream cheese
PREHEAT oven to 350 F.
LINE a 9x9 inch metal baking pan with parchment paper and grease with oil.
POUR batter into the prepared pan and spread evenly.
BAKE for 15-20 minutes, or until center of bars bounce back when pressed.
ADD in a separate bowl, 1 container of Simple Mills Vanilla Frosting and 3/4 cups dairy-free cream cheese.
MIX with an electric mixer with a whisk attachment until light and creamy.
FROST the pumpkin bars with dairy-free cream cheese icing when they have cooled.
CUT into 9 square pieces.
