Southern Biscuits and Country Gravy

Whether you are enjoying breakfast or brunch, these Southern Biscuits smothered in Country Gravy are a must try. Who are we kidding, you could enjoy this dish for lunch or dinner too!


Ingredients:

Biscuits Ingredients:
1/2 cup Lifeway Organic Kefir
2 eggs
1 Box Simple Mills Artisan Bread Mix

Gravy Ingredients:
1 1/2 Tbsp grape seed oil, butter or lard/tallow
(if you want to go whole-hog… pun intended!)
3 Tbsp arrowroot
1 1/2 cup milk (or sub 3/4 cup non-dairy unsweetened almond/coconut milk plus 3/4 cup water)
Sea salt and pepper

Instructions:

PREHEAT oven to 350°F.
COMBINE wet biscuit ingredients in a bowl, and then mix in the dry ingredients.
DROP by large spoonfuls onto a greased pan and bake for 20 minutes.
HEAT oil in a skillet over medium heat while biscuits are baking, and then add arrowroot, whisking constantly to make a roux.
WHISK in milk 1/4 to 1/2 cup at a time quickly until incorporated and gravy is smooth. Add sea salt and pepper to taste.
REMOVE biscuits from oven.
LADLE hot gravy generously over warm buttered biscuits to complete this savory, comforting dish.
GARNISH with sprigs of fresh thyme or parsley.

 

Tips:

For a heartier meal (and better flavor when using non-dairy milk), add cooked, chunked turkey/chicken sausage to gravy and then pour over buttered biscuits
