Sweet + Spicy Scrambled Egg Waffle Sandwich

1 1/2 cup Simple Mills Waffle Mix
5 Tbsp of Milk
2 Tbsp of Oil
2 Tbsp of Pure Maple Syrup (optional for sweetness)
Roughly 1 inch of crumbles from a goat cheese log
1 Tbsp of fresh chopped chives
1 tsp Everything Bagel seasoning
Sea salt and cracked pepper to taste
Half an avocado, sliced
Raspberry jalapeño jam or a similar pepper jelly
Mixed micro greens
Fresh sliced jalapenos
Instructions:ADD all waffle ingredients together in a medium size bowl and whisk until smooth. Pour onto your waffle maker and cook according to instructions.
COOK eggs, goat cheese, chives, and seasonings in a small skillet with 1 tsp melted butter. Whip the eggs gently and continue to fold until mostly cooked. For a soft scramble, stop folding before they’re fully cooked and remove the skillet from heat. The eggs will continue to cook until you’re ready to add them to the sandwich.
LAYER one waffle with avocado slices and add the scrambled eggs. On the other waffle, spread the jam, add the micro greens, and the fresh jalapeños. For a little extra touch, drizzle just a bit of honey over both slices and put both sides together to make your sandwich.
