Thanksgiving Leftovers Quiche

Don't know what to do with all of those leftovers from Thanksgiving? This Leftovers Quiche is an easy and delicious way to use up any extra turkey and veggies from your Thanksgiving meal.


For the Crust
1 box Simple Mills Almond Flour Pizza Dough Mix
2 Tbsp apple cider vinegar
2 Tbsp olive oil
1/3 cup water
For the Filling
1 Tbsp olive oil
1 cup sweet potatoes, diced
1 cup broccoli, chopped
½ cup onion
1 tsp garlic powder
1 tsp Italian seasonings
5 eggs
1 cup almond milk
½ lb left-over turkey


PREHEAT oven to 350 F
MIX apple cider vinegar, olive oil, water, and Simple Mills Almond Flour Pizza Dough Mix in a large bowl until a ball of dough forms
PRESS the dough into a quiche pan and blind-bake for 10 minutes
COOK the sweet potatoes, broccoli, and onion in a pan with the olive oil until soft.  Season with garlic powder and Italian seasonings.
WHISK eggs and almond milk in a bowl.  Add the vegetable mixture and left-over turkey and stir to combine
POUR the egg mixture into the crust and bake for 35 – 40 minutes until the filling is set
COOL for 10 – 15 minutes before slicing and enjoy!
