Cacao Zucchini Waffles

1 medium zucchini, grated, excess moisture squeezed between paper towels

3 eggs

5 tablespoons milk

2 tablespoons coconut oil, melted and cooled

1 1/2 cups Simple Mills Pancake and Waffle Mix

1/3 cup raw cacao powder

Optional toppings: cacao nibs, sliced strawberries, sliced bananas


WHISK eggs, milk, and oil in a large bowl. Fold in the grated zucchini until all is combined.

ADD the Simple Mills Pancake and Waffle Mix and the raw cacao powder to the bowl. Mix until all is well combined. Set aside.

POUR batter onto a preheated and greased waffle maker and cook according to manufacturer’s instructions. As you make the waffles, place them on a cookie sheet being careful not to stack them as they may get soggy.

SERVE waffles with a dollop of coconut whipped cream or Greek yogurt, fruit, cacao nibs, and maple syrup. Enjoy!
