ADD all ingredients (except toppings and crackers) into a high speed blender. Blend until smooth, scraping the sides as needed. If the mixture is too thick, add more coconut milk, one tablespoon at a time, blending in between additions.
TRANSFER into a serving bowl. Garnish with sesame seeds and cacao nibs, if desired.
