Chocolate Chip Coconut Banana Bread

You'll go bananas over this recipe for Chunky Monkey Banana Bread. (Bonus: There's chocolate chips!)
2 Tbsp coconut oil
1 cup water
1/2 tsp vanilla
1 box Simple Mills Banana Muffin Mix
1/2 cup coconut flakes
1/3 cup unsweetened chocolate chips
PREHEAT the oven to 350.
WHISK together the egg, coconut oil, water and vanilla in a large mixing bowl.
ADD 1 package of Simple Mills Banana Muffin Mix and combine.
MIX in the chocolate chips once you have a somewhat thin liquid batter (you may need to add a few tablespoons of extra water).
FOLD in the coconut flakes gently.
BAKE for 20 minutes.
SPRINKLE a few coconut flakes on top of your loaf and bake for another 10 minutes.
