Cinnamon Pumpkin Donut Holes

Ingredients:
For the Donuts
1 box Simple Mills Pumpkin Pancake & Waffle Mix
2 eggs
2 tbsp coconut oil, melted
3⁄4 cup water
1 tsp vanilla
1 tsp cinnamon
For the Coating
1/3 cup coconut sugar
1 tsp cinnamon
1 tbsp coconut oil, melted
Instructions:
PREHEAT oven to 350 F.
BEAT the eggs, coconut oil, water, and vanilla until well mixed.
ADD the Simple Mills Pumpkin Pancake & Waffle Mix and cinnamon and mix until the flour is well incorporated.
SPOON the batter into a mini muffin pan greased with oil. Fill each cavity about 2/3 of the way full and bake for 15 minutes. Let cool.
MIX the coconut sugar and cinnamon for the coating in a shallow bowl.
ROLL each mini muffin in between the palms of your hands to create a round shape.
BRUSH with the melted coconut oil and roll in the cinnamon mixture in the shallow bowl to coat.
PLACE on a baking sheet to dry and enjoy!
