Cinnamon Waffles with Caramelized Apples

Ingredients:
Cinnamon Waffles
3 eggs
5 tablespoons milk
2 tablespoons coconut oil, melted and cooled
1 1/2 cups Simple Mills Pancake and Waffle Mix
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Caramelized Apples
1 tablespoon coconut oil
2 apples, peeled and cut into 1/2-inch slices
1/4 cup maple syrup
1/2 teaspoon ground cinnamon
Pinch of flaky sea salt
Additional toppings: coconut whipped cream, Greek yogurt, chopped walnuts
Instructions:
WHISK eggs, milk, and oil in a large bowl.
MIX in the Simple Mills Pancake and Waffle Mix, cinnamon, and nutmeg to the bowl until well combined.
POUR batter onto a preheated and greased waffle maker and cook according to manufacturer’s instructions. As you make the waffles, place them on a cookie sheet being careful not to stack them as they may get soggy. Set aside.
HEAT oil in a skillet at medium-high heat and sauté the apples for about 5 minutes.
ADD the syrup, cinnamon, and salt to the skillet. Reduce heat and simmer until the apples are soft, stirring occasionally, about another 5 minutes.
SERVE waffles with a dollop of coconut whipped cream or Greek yogurt, caramelized apples, chopped walnuts (optional), and maple syrup. Enjoy!
