1 egg 1 tbsp water 2 tsp avocado or melted coconut oil, plus more for cooking. Zest of 1/2 an orange 1/2 cup Simple Mills Pancake & Waffle Mix Coconut yogurt Honey Blood orange slices Orange slices Grapefruit pieces Chia Seeds
WHISK together egg, water, oil, orange zest and Simple Mills Pancake Mix. PREHEAT a pan. Once hot, brush some oil onto it and make pancakes using about 1 1/2 tablespoon of batter for each pancake. COOK until brown then flip and cook a little longer. REPEAT until you have no batter left. TRANSFER pancakes onto a plate and garnish with coconut yogurt, honey, blood oranges, oranges, grapefruit and chia seeds. Enjoy immediately.
