SEASON chicken breasts with salt and pepper. Set aside.
BEAT eggs in a large bowl and set aside. In another bowl, add the crushed crackers, garlic powder, and grated Parmigiano-Reggiano.
COAT each chicken breast in the egg first then in the cracker-cheese mixture. Shake off the excess off and repeat with the rest of the chicken breasts.
COOK chicken breasts in a hot skillet with the avocado oil at medium heat for 4 minutes on each side until cooked through and golden. The internal temp needs to be 160*F.
TOP the chicken breasts with marinara sauce, mozzarella cheese, and parsley. Serve and enjoy!
