Cranberry Goat Cheese Prosciutto Bites made with Almond Flour Crackers Recipe

Ingredients:

1 box of Simple Mills Fine Ground Sea Salt Almond Flour Crackers 
1 cup fresh or frozen cranberries
1/2 shallot, thinly sliced
2 tsp honey, divided
1/4 cup orange juice
Zest of half an orange
2/3 cup soft goat cheese
Sliced prosciutto
Pepper, to taste
 

Instructions:

PREHEAT oven to 400ºF.
PLACE cranberries, shallot, 1 teaspoon of honey, orange juice and orange zest in a glass baking dish. Toss to coat uniformly.
BAKE for 20 minutes or until the cranberries are soft and the juices have thickened. After removing from the oven, mix in the remaining teaspoon of honey.
ADD the goat cheese. Using a hand mixer, mix until creamy and easily spreadable. Set aside.
TOP each Simple Mills cracker with a thin slice of prosciutto, followed by half a teaspoon of whipped goat cheese. Garnish with two roasted cranberries and a crack of pepper, if desired.
