Easter Cracker Toffee

A better-for-you spin on traditional cracker toffee
Ingredients:
1 box
Simple Mills Fine Ground Sea Salt Almond Flour Crackers
1/4 cup butter (or vegan butter)
1/4 cup organic brown sugar
1/3 cup
Simple Mills Vanilla frosting,
at room temperature
1/4 cup sprouted pumpkin seeds
Natural sprinkles (optional)
Instructions:
PREHEAT
oven to 400ºF and line a baking sheet with parchment paper.
LINE
up your
Simple Mills crackers
on the prepared baking sheet, forming a rectangle. Set aside.
ADD
butter and brown sugar to a small saucepan and melt over medium heat, stirring regularly. Once melted, increase heat to high and boil for 2 minutes.
POUR
mixture onto the crackers. Carefully spread using a rubber spatula.
BAKE
for 6 minutes then let cool completely.
SPREAD
vanilla frosting onto the toffee and garnish with sprouted pumpkin seeds and natural sprinkles.
REFRIGERATE
until the frosting is completely set. Break into pieces and enjoy.
KEEP
in the fridge.
