Four Quick and Easy Cracker Appetizers

Looking for some quick and easy appetizers? Try one (or all) of these cracker combinations including Fine Sea Salt Crackers with Brie and Jam, Sun Dried Tomato Crackers with Goat Cheese and Pesto, Cheddar Crackers with Apples and Walnut Butter and Rosemary Crackers with Ricotta, Figs and Honey.
Instructions:
Fine Ground Sea Salt Crackers with Brie and Jam:
BRING a container of plain goat cheese to room temperature so that it is spreadable.
SPREAD a generous portion on a Simple Mills sun dried tomato cracker.
TOP with a small scoop of pesto.
REPEAT with the remaining crackers in the box.
SERVE immediately.
Sun Dried Tomato Crackers with Goat Cheese and Pesto:
BRING a container of plain goat cheese to room temperature so that it is spreadable.
SPREAD a generous portion on a Simple Mills sun dried tomato cracker.
TOP with a small scoop of pesto.
REPEAT with the remaining crackers in the box.
SERVE immediately.
Cheddar Crackers with Apples and Walnut Butter:
SLICE the apple into small portions about the size of a cracker.
PLACE one slice on a Simple Mills cheddar cracker, add a dollop of walnut butter, and sprinkle a bit of cinnamon on top to finish.
REPEAT with the remaining crackers in the box.
SERVE immediately.
Rosemary Crackers with Ricotta, Figs and Honey:
TOP a Simple Mills rosemary cracker with a small dollop of ricotta cheese.
SLICE a fig in half lengthwise and place, face down, on the ricotta.
DRIZZLE with honey.
REPEAT with the remaining crackers in the box.
SERVE immediately.
Tips:
To make your own walnut butter, combine ½ cup shelled walnut pieces, 2 teaspoons honey, ¼ teaspoon cinnamon, and a pinch of salt in the bowl of a food processor fitted with the “s” blade attachment and pulse a few times to chop the nuts. With the processor running, pour in 3 Tablespoons neutral-flavored oil (such as grape seed or canola) and ½-1 tsp water (if necessary) until the butter is runny enough to dollop on top of the apple.
For best results, these appetizers should be prepared immediately before serving.
