Goji Berry & Cashew Breakfast Bars made with Almond Flour Baking Mix Vanilla Cupcake and Cake Recipe

Ingredients:

1 box Simple Mills Vanilla Cake Mix (you can try this recipe with any of our 3 muffin mixes!)
3 organic eggs (2 if using Simple Mills Banana Muffin Mix)
2 Tbsp coconut oil
1/2 cup water (1 cup if using Simple Mills Banana Muffin Mix or Simple Mills Pumpkin Muffin Mix)
1/4 cup goji berries, soaked for 1 hour
2 Tbsp cashew butter
1-3 Tbsp milk (dairy or non-dairy)
 

Instructions:

Before you make the bars, SOAK ¼ goji berries in water for up to an hour and drain.

PREHEAT oven to 350ºF

MAKE Simple Mills mix according to instructions on box and pour into brownie pan (ideally 8x8in)

BAKE for 25-30 minutes, until top is golden brown and a toothpick comes out clean

In a separate bowl, BLEND together cashew butter and almond milk for a drizzle

CUT 8 rectangular bars. Drizzle with cashew butter drizzle and sprinkle goji berries on top
