Lemon Pancakes & Blueberry Sauce

The combination of lemon and blueberry make for a refreshing breakfast that's easy to make. 
Lemon Pancakes & Blueberry Sauce made with Almond Flour Pancake and Waffle Mix Recipe

Ingredients:

Pancakes
1 box Simple Mills Pancake & Waffle Mix
1/4 cup water
3 tbsp coconut oil
Juice of 1/2 lemon (about 2 tbsp)
Zest of 2 lemons
5 eggs
 
Blueberry Sauce
1 1/2 cup fresh or frozen blueberries
1 tbsp lemon juice
3 tbsp maple syrup
 
To Serve
Yogurt
Lemon zest
 

Instructions:

ADD all pancake ingredients into a bowl and mix to combine.
HEAT a lightly oiled pan on medium heat. Pour two tablespoons of batter into the pan, forming pancakes.
COOK until edges are dry, turn and brown other side.
REPEAT for the rest of the batter.
PREPARE the blueberry sauce by adding blueberries, lemon juice and maple syrup to a small saucepan.
COOK on high heat until the sauce is bubbling (about 5 minutes).
REDUCE heat and let simmer for 20 minutes.
ENJOY pancakes with yogurt, the blueberry sauce and a bit of lemon zest
