BRING a large pot of salted water to boil. When boiling, drop the peas and blanch for 1 minute if using fresh peas and blanch for 2 minutes if using frozen peas. Take off the heat, drain and run under cool water to stop cooking. Drain.
TRANSFER peas to a bowl, add olive oil, lemon juice and garlic. Using a fork, mash lightly.
ADD crumbled feta cheese and fresh mint. Mix. Taste and season with salt, pepper and chili flakes if using. Adjust seasonings by adding more lemon for acidity, mint for freshness and feta for cheesiness.
