This simple recipe for chicken salad can be made two ways - Paleo and Vegan. If opting for the Vegan version, simply swap out the chicken for jackfruit. See, simple!
1 20-ounce can of jackfruit in brine OR 1 cup cooked chicken chopped into bite sized pieces or shredded 2 celery stalks, finely diced 1/2 cup red grapes, halved 3 tbsp vegan mayonnaise OR regular mayonnaise if not vegan 2 tbsp red onion, finely diced 2 tbsp lemon juice 1 tsp nutritional yeast 1/2 tsp Dijon mustard 1/4 tsp celery salt 1/4 tsp garlic powder A pinch of cayenne Salt and pepper, to taste 1 box Simple Mills Sundried Tomato & Basil Almond Flour Crackers
If Using Jackfruit (Vegan): DRAIN and rinse the jackfruit and place on a large cotton kitchen towel. Gather all corners together and squeeze out all the water. ADD to a large bowl. Remove the tough core and seed pods. ADD the rest of the salad ingredients. Mix, taste and adjust seasonings as desired.
