Salted Carmel Brownies

Yield: 14-16 pieces
Ingredients
1/2 cup coconut sugar
4 tbsp dairy-free butter *
4 tbsp full fat coconut milk **
1/2 cup melted coconut oil
3 tbsp water
2 eggs
1 box
Simple Mills Brownies
Large flake sea salt
Instructions
LINE
a square or rectangular glass container with parchment paper. Set aside.
ADD
coconut sugar, butter and coconut milk to a small saucepan and bring to a boil, mixing regularly.
LOWER
heat to medium low and let bubble for about 13 minutes, mixing occasionally.
POUR
the caramel mixture into the parchment-lined container.
PLACE
in the freezer until set (about 30 minutes). Note that some separation might have occurred, but this will not affect the deliciousness of the caramel and the brownies.
CUT
into squares and set aside.
HEAT
oven to 375ºF and line a 8”x8” pan with parchment paper. Set aside.
WHISK
coconut oil, water and eggs in a large bowl.
ADD
baking mix and stir until well combined.
SPREAD
evenly into prepared pan, top with caramel squares and bake for 25 minutes.
REMOVE
from the oven and garnish with sea salt.
LET COOL
for 30 minutes before cutting into squares.
