Spinach and Artichoke Pizza

This pizza is a fun twist on the classic spinach & artichoke dip, and so simple to make!
Spinach and Artichoke Pizza with ingredients and Pizza Dough Mix box

Ingredients:

For the Dough 

2 Tbsp apple cider vinegar 

2 Tbsp olive oil 

⅓ cup + 2 Tbsp water 

1 box  Simple Mills Almond Flour Pizza Dough Mix 

 

For the Greek Yogurt Sauce 

1 Tbsp olive oil 

4 cloves garlic, finely chopped 

1 tsp dried oregano 

½ tsp dried thyme 

½ tsp fennel seed, crushed 

⅛ tsp onion powder 

⅛ tsp garlic powder 

½ tsp salt 

1 cup fresh baby spinach 

¾ cup greek yogurt 


Toppings

1 cup artichokes, drained and sliced in half 

¼ cup shredded Monterey 

¼ cup shredded gouda 

¼ cup mozzarella  

Garnish with parmesan and fresh basil 

Instructions:

PREHEAT oven to 350ºF. 

WHISK apple cider vinegar, olive oil, and water in a large bowl. Add Simple Mills Almond Flour Pizza Dough. Stir until a dough forms.  

PLACE the dough on a lightly oiled piece of parchment paper and flatten it with your hands to form a 12-inch circle.  

TRANSFER to a baking sheet or pizza stone and bake for 10 minutes. 

ADD olive oil, garlic, oregano, thyme, and fennel seed to a saucepan and saute for 5-7 minutes, or until the garlic is soft. Add this mixture to a bowl to cool, and then add the greek yogurt, salt, onion powder, and garlic powder and mix. 

SAUTE the spinach in the pan until slightly wilted, then remove and set aside for garnishing. 

SPREAD the greek yogurt mixture over the crust 

TOP with spinach, cheese, artichokes, and more cheese.  

TURN the oven to 400ºF and bake for another 10-15 minutes or until the cheese is bubbly. 

 

Tips:

This recipe can be made vegan by replacing the greek yogurt with coconut yogurt, and opting for dairy-free cheese instead.
