PREHEAT oven to 400ºF and line a baking sheet with parchment paper.
PLACE the sweet potato circles onto the baking sheet, drizzle with avocado oil and season with salt and pepper.
BAKE for 15-20 minutes or until fork tender. Let cool completely and cut into quarters.
ASSEMBLE your crackers by topping each Simple Mills cracker with 1 teaspoon of cream cheese.
TOP with a sweet potato quarter, a slice of pear and fresh thyme.
