ADD tofu, yogurt, coconut sugar, stevia, cashew butter, salt, and vanilla extract to a blender and blend until smooth.
WHISK instant coffee and water together.
DUNK Simple Mills Cocoa Cashew Creme Nut Butter Sandwich Cookies in the coffee and place on the bottom of a small round dish.
POUR the cream mixture over the top, only filling half way.
DUNK another Simple Mills Cookie in coffee, place on top of the cream mixture.
SIFT some espresso powder over the top, and pour another layer of cream mixture up to the top of the dish.
REFRIGERATE for at least 4 hours to let set.
ONCE READY TO SERVE, dust with cocoa powder and enjoy!
