Vegan Brownie Pops

1/2 cup melted coconut oil
6 tbsp water
2 tbsp flax seed
1 box Simple Mills Brownies
1/2 cup chopped dark chocolate
HEAT oven to 375ºF and line a 8”x8” pan with parchment paper. Set aside.
WHISK coconut oil, water and flax seeds in a large bowl.
ADD baking mix and stir until well combined.
SPREAD evenly into prepared pan; smooth top and bake for 25 minutes.
REMOVE from the oven and let cool completely.
PLACE in the fridge for 1 hour so that the brownies harden and are easier to cut.
TAKE out brownies from the fridge and cut into 16 squares.
MELT dark chocolate, and have your toppings as well as pop sticks nearby.
COAT half of each brownie square in dark chocolate. Sprinkle with toppings and return to the fridge for 15 minutes to set the chocolate.
INSERT a pop stick into each brownie and enjoy immediately.
Tips:These brownies hold best on the pop stick when slightly chilled.
