PREHEAT oven to 375ºF and line a 8x8 inch baking pan with parchment paper. Set aside.
For the Cookie Layer:
WHISK vegan butter, aquafaba, vanilla extract, and Simple Mills Chocolate Chip Cookie Mix in a bowl.
For the Brownie Layer:
WHISK almond butter, coconut oil, and water in a large bowl.
ADD baking mix and stir until combined.
SPREAD cookie dough in an even layer on the button of the prepared baking pan.
TOP with Simple Mills Cocoa Cashew Creme Nut Butter Stuffed Sandwich Cookies.
POUR brownie batter on top and spread evenly.
BAKE for 25-30 minutes.
LET cool and cut into 9 squares for large brownies, or 16 squares for small brownies.
