Veggie Focaccia

This fresh and bright Focaccia recipe is a great way to get creative in the kitchen. Top it with seasonal herbs and veggies and enjoy!
Ingredients:
1 box Simple Mills Organic Nut & Seed Flour All Purpose Baking Mix
1 ½ cups water (120ºF)
1 tbs + 1 tsp instant yeast
1 tbs psyllium husk powder
1 tsp baking powder
1 tbs honey
¼ cup extra virgin olive oil + extra for the top
Optional Toppings: rosemary, tomatoes, flaky sea salt, peppers, garlic, onion, shallot, or basil.
Instructions:
ADD Simple Mills Organic Nut & Seed Flour All Purpose Baking Mix, instant yeast, psyllium husk powder, and baking powder into a large bowl and stir to combine.
WARM water between 120-130ºF. Use a thermometer to ensure the water is not too hot, or you could potentially kill the yeast.
ADD the honey to the warm water and stir until dissolved.
POUR the liquid into the dry ingredients and mix.
ADD the olive oil to the dough and combine. The dough should start to come together now.
TRANSFER the dough to a 9x9-inch baking dish that has been lined with parchment paper and olive oil.
SPREAD the dough out and press dimples into the dough using wet fingers.
COVER the dish with a kitchen towel and place in a warm spot for 30 minutes, or until doubled in size.
PREHEAT the oven to 375ºF while the dough is rising.
DRIZZLE a generous amount of olive oil over the dough and add your favorite toppings.
BAKE for 30-35 minutes or until the top is golden brown.
