A crispy and savory veggie-filled treat to enjoy on Earth Day or everyday!
1 box Simple Mills Garlic & Herb Organic Seed Cracker
2 cups broccoli stems, peeled and shredded
2 cups zucchini, shredded
½ cup celery leaves, chopped
2 scallions, chopped
6 garlic cloves, minced
¾ tsp salt
1 tbsp tapioca starch
olive oil for frying
Optional garnishes: lemon zest and microgreens
ADD Simple Mills crackers into a food processor. Pulse until crackers resemble sand and set aside.
PEEL the broccoli stems to completely remove the tough outer layer and shred using the large side of a box grater.
ADD prepared broccoli stems, shredded zucchini, chopped celery leaves, scallions, and ½ tsp salt to a large bowl.
MIX to combine and let sit for 15 minutes.
TRANSFER veggies to a cheesecloth or clean kitchen towel and squeeze out the excess water.
COMBINE veggies, eggs, garlic cloves, tapioca starch, ½ cup Simple Mills Garlic & Herb Organic Seed Cracker Breadcrumbs and ¼ tsp salt in a large bowl.
HEAT olive oil over medium heat in a large heavy skillet.
DROP 2-3 tablespoons of veggie fritter batter and gently flatten with the backside of the spoon.
FRY until golden brown, about 2-4 minutes.
FLIP over and brown the other side, about 2-4 minutes.
REPEAT with the remaining batter.
SERVE with lemon zest and microgreens, and enjoy!
