Zucchini Banana Bread made with Almond Flour Baking Mix Banana Muffin & Bread Recipe


1 box Simple Mills Banana Muffin Mix
2 Organic eggs
2 Tbsp coconut oil
1 cup water
1 tsp vanilla extract
2 tsp ground cinnamon
1 small zucchini
1 small 6-inch over-ripe banana, or 1/2 cup mashed


PREHEAT oven to 350ºF
BAKE   Simple Mills Banana Muffin Mix according to instructions on box
CHOP one small zucchini and add into food processor. Process until zucchini is finely chopped but not pureed
PLACE zucchini into a cheesecloth or nut milk bag and squeeze to remove excess water
MIX into the banana batter, followed by mashed banana, vanilla extract, and cinnamon
POUR batter into a greased 7.5x3.5 loaf pan
BAKE for 40-50 minutes, or until toothpick comes out clean
