Mini Lemon Poppyseed Bundt Cakes

These Mini Lemon Poppy Seeds Bundt Cakes pair perfectly with a handful of freshly picked raspberries and make a deliciously delicate dessert.
1/3 cup water
1/3 cup coconut oil, melted and cooled
1 Tbsp vanilla extract
Juice from 1 lemon
1 box Simple Mills Vanilla Cake Mix
2 Tbsp lemon zest
2 Tbsp poppy seeds
PREHEAT oven to 350F and grease a mini bundt pan (any size bundt pan or muffin tin will work).
WHISK eggs, water, oil, vanilla extract, and lemon juice. Add baking mix, mix until well blended.
ADD in lemon zest and poppy seeds, fold until well blended.
POUR batter into mini bundt pan.
BAKE for 15-20 minutes.
REMOVE from oven and let cool. Once cooled, top with melted coconut butter, slivered almonds & raspberries.
